Welcome, not a Canadian but all the things you've listed are easily done. It's more the paperwork process that'll be unique to Quebec.

I think here in the uk they are looking into a screen option but I think MEV are still prototyping that

Land Rover defender wipers would probably work on the small screen. I know at least one builder on here, though I forget who, added hand operated wipers to pass their inspection.

Sorry, I'm also not Canadian and I don't know the rules in Quebec but my advise is to carefully read all of the laws regarding automobiles. Keep in mind that the law can change so you need to review it periodically throughout your build. My state recently changed the law regarding headlights and tail lights to allow LED bulbs: they were banned until the law changed which is crazy given the number of production cars I've seen with them over the last 5 years. I'm in Massachusetts/USA and my race frame will have a full windshield. It's very likely that I'll install electric windshield wipers to ensure road legality as the law in my state is vague. The section regarding windshields does not dictate that wiper are required - they're not even mentioned - whereas the section regarding annual inspections specifically mentions that they must operate but doesn't mention that they are required. I'm leaning toward this kit (AutoLoc Power Windshield Wiper Kit) as it's more compact that the Miata motor and I, er, destroyed most of the parts from my donor when I was taking chopping up the body... A bit pricey but should be easy to install. As for lights, almost all US states require DOT-certified lights and the placement, number (brake lights/marker lights), color (for turn signals/markers), type of bulb, etc. vary but Canada may require other markings. If you're going for street legal only buy lights that have the proper markings. You'll also need to know about bumpers (not required in my state unless the vehicle was manufactured with them) and fenders (required on all street vehicles...I think...in my state; another hazy statement in the law). It also helps if you're a lawyer or have one as a friend to help interpret the language.
